SUMMARY:

The Assistant Director of Retail Operations provides leadership, managerial support, and operational oversight to a variety of retail operations for the University of Richmond. The Assistant Director is responsible for sales in four retail units exceeding $3.3 million annually, and supervision for approximately four managers, 20 hourly staff, and student employees. Currently responsible for the operation of 8:15 at Boatwright Cafe, Organic Krush, Passport Cafe and Lou's Cafe.

Operations

Provides managerial support to retail operations.

  • Responsible for creative direction at retail locations and researches and approves new menu items and products in collaboration with executive chef and retail director.
  • Maintains menus and updates in mobile, kiosk, digital menus, and point of sale systems.
  • Plans, develops and monitors the operational policies and procedures for food production standards and methods, menu guidelines and development for retail operations with food management and recipe system standards.
  • Employs multiple methods of communication to internal and external members of the department and university community.
  • Keeps an open line of communication with the student and campus community; monitors student response to improve services, and conducts and participates in focus groups.
  • Establishes and maintains standards of quality, service, safety, sanitation and cleanliness.
  • Monitors compliance with all applicable health and safety regulations.
  • Ordering, receiving, product concerns, product sampling, menus, forecasts, proper food costs, proper recipe applications, proper inventories, deliveries, vendor problems or concerns, memos, schedules

Leadership

Implements the direction for retail operations as determined by the Director of Retail Operations. Provides leadership, management and supervision of an efficient operation and cultivates effective communication, teamwork, and customer service.
  • Encourages an environment which encourages maximum productivity, positive employee morale, teamwork, engagement, and open communication.
  • Implements recruiting, training and development programs for teams and individuals in retail dining units. Works in collaboration with training manager and retail director.
  • Fosters a culture of culinary innovation and excellence in customer service.
  • Develops effective marketing and strategic plans to evaluate customer satisfaction and needs.
  • Projects a positive image to promote the interests of the department.
  • Implements best practices to ensure efficiency and consistency in department operations, sustainability practices, customer service and sanitation standards.
  • Human Resource issues: oversees payroll functions for the department, hiring, interviews and terminations, enforces policies, reviews staff evaluations, and evaluates managers.

Financial Management and Reporting

Monitors the financial operations of assigned retail operations, managing revenues and expenditures to meet established goals.
  • Ensures compliance with established cash handling, financial and procurement processes. and practices.
  • Aids in development of the annual budgets of covered areas, and tracks monthly financial statements Ensures effective control of costs within assigned retail areas.
  • Collects benchmark data against peer institutions and local retail establishments to monitor measurable performance standards.
  • Works with the Director of Retail Dining to recommend pricing adjustments for menus.

QUALIFICATIONS:
  • Ability to communicate effectively and professionally. Ability to read, interpret and enforce dining services and University policy and procedures
  • Strong verbal, written, and interpersonal skills.
  • Ability and desire to direct, motivate, and discipline staff.
  • Commitment to good public relations.
  • Maintains high standards of personal appearance and hygiene.
  • Dependable and flexible.
  • Ability to develop, organize, analyze and implement programs.
  • Detail oriented, self-motivated and reliable.
  • Strong food production knowledge and must have a passion for culinary excellence.
  • Cooperative, enjoys working with people and displays a pleasant disposition.
  • Has general knowledge of MS Office and Excel, and the ability to learn Time Pro time keeping program, and inventory management system.
  • Ability to control food costs, labor cost, and overall departmental budgets.
  • The ability to obtain the Serve Safe certification when offered, Basic first aid, CPR, and AED training.
  • Demonstrates high ethical standards, tact and diplomacy to work with the University's hierarchy; maintains confidentiality.
  • In depth knowledge of current food trends and food preparation and presentation techniques.
  • Considered an essential employee.
  • Required: Must have a valid Driver's License and be able to produce a driving record with a minimum of 3 years of driving history in good standing

EDUCATION & EXPERIENCE:
  • Associate's or Bachelor's degree in business or foodservice administration or a related field.
  • Minimum of three years of food and beverage management experience in hotels or retail establishments (or a related field) required.
  • A combination of experience and training may be substituted for educational requirement.

WORK HOURS:
  • Full-time, exempt position
  • Monday - Friday, 8:30 a.m. to 5:00 p.m (flexible).; 7.75 hrs./day; 38.75 hrs./week
  • Designated as essential personnel. Busy environment with high level of contact with others. Provides support to operations, including weekend and evenings as needed

SALARY STRUCTURE:
Pay Grade 7 (Hiring Range $52,829.00 to $69,999.00 annually)
